For those unfamiliar with In-N-Out, their menu is effectively unchanged for decades (burger, double burger, fries, coke, shakes...that's about it), but there is a constant evolution in their offerings from the grass roots. Other chains (McD, BK, SNS, Hardee's, Taco Bell, Arby's, etc) have their test kitchens which look to expand menu size with scores of gimmicky items (McRib, Club Sandwiches, Mini-Burgers, the plethora of Taco Bell items). But In-N-Out has a cult following which effectively changes the menu from the grass roots creating a "secret menu". Most famous items are "Animal Style" burgers or "Animal Style" fries, the Flying Dutchman, Protien Burger, Veggie Burger, etc. Besides that, none of the food items are frozen and one can see the staff juliening potatoes minutes before they are placed in the fryer.
